Fall Favorite Feature: Pumpkin Dessert

Tom the Turkey Hoot and I were going through our recipe books looking for the perfect treat to make for this week’s Fall Favorite Features.

Tom: I want to make this!

Me: Pumpkin Dessert? This doesn’t look too complicated, and it has my favorite fall ingredient: Pumpkin!! Let’s give it a try.

First we need to gather the ingredients and preheat the oven 350° F

Tom: I’ve gathered all the ingredients!

Pumpkin Dessert (from Taste of Home.com)


  • 1 Package yellow cake mix (18-1/4 ounces)
  • ½ cup butter, melted
  • 1 egg


  • 1 can (30 ounces) pumpkin pie filling
  • 1 can (5 ounces) evaporated milk
  • 2 eggs, lightly beaten


  • ½ cup sugar
  • ¼ cup all-purpose flour
  • 3 teaspoons ground cinnamon
  • and remaining 2/3 cup of Crumble/Crust
  1. In a large bowl, combine the cake mix, butter and egg until crumbly. Set aside 2/3 cup for topping. Press the remaining crumb mixture into a greased 13” x 9” baking dish.
  2. For filling, in a large bowl, combine the pumpkin pie filling, milk and eggs; pour over crust.
  3. For topping, combine the sugar, flour, cinnamon and reserved crumb mixture; sprinkle over pumpkin layer.
  4. Bake at 350° F for 45-50 minutes or until top is golden brown. Cool on a wire rack for 1 hour. Cover and refrigerate for at least 2 hours before serving.

Tom: Is it ready?

Me: No. It has to cool for 1 hour on the wire rack.

Tom: But it smells like cookies.

One Hour Later

Tom: Ok! Now we eat!

Me: No. It needs to cool in the fridge for another 2 hours.

Tom: Wah… But… Pleeeease.

Me: Nope. That’s the recipe.

Tom: I’m going to need to pick a long movie to pass the time.

2 Hours Later

Tom: It’s Ready!

Me: Let’s eat!

Tom: Mmmm… It tastes like Pumpkin Pie and Cookies!

That’s right. The crust has the consitancy of cookies and it tastes similar to sugary butter cookies with a delicious pumpkin pie filling and crumbled sugary topping. I used pumpkin pie spice instead of cinnamon when I made it.

Make sure to let it cool to a nice chilled temp, maybe over night. Even after the 2 hours in the fridge the dessert had some warmth to it. When I had it the next day it tasted even better!

Can be made the night before. I suggest serving it chilled, but it would probably be ok at room temp too. Store leftovers in the refrigerator.

Also, I only had one 15oz can of Organic Pumpkin Pie filling, so I added another 15 oz can of Organic Pumpkin Puree, then added 3-4 tsp. of pumpkin pie spice. It tastes wonderful and smells like cookies while it’s baking and cooling, which is why Tom was really eager to eat it.
